A gluten free cake that doesn't suck. This cake is moist, fluffy, a little bit spicy and all delicious. Especially when you put a little Campfire Apple Rum Deliciousness on top. I greatly reduced the amount of sugar (honey in this case) so I could add sugar by using a pretty frosting and Deliciousness topping. If you want to forgo the icing, you may want to up the honey amount as the cake is not too sweetened in this case. It would also be super easy to make this cake vegan as well with just a couple minor adjustments. Noted in ingredients.
Gluten Free Spiced Applesauce Cake w/Vanilla Cream Cheese Frosting
•2 Eggs (or Flax eggs)
•1.5 cups of apple sauce (If you don't have any, call my mom, she has lots)
•1/3 cup honey
•1/2 cup grapeseed oil
•1 tsp vanilla extract
•3/4 cup pecans (or any nuts you fancy, including fancy nuts)
•1/3 cup flaxseed flour
•1/3 cup mesquite flour (I know, this is a doozy to find. I got mine in Tucson, La Madera Mesquite Flour ..if you can't find this, just use more of one of the other flours)
•1 and 1/3 cup oat flour
•1/2 cup gluten free all purpose flour mix
•2 tsp baking soda
•1 tsp baking powder
•1 tsp nutmeg
•1/2 tsp ginger powder
•1/8 tsp clove powder
•1/2 tsp salt
•1/2 cup cacao nibs (this will add some crunch to the cake, if you don't like that texture, leave these out. We get our Nibs from both Ritual Chocolate and Cultura Chocolate)
•1/2 block of cream cheese (or a vegan cream cheese)
•1/4-1/2 cup powdered sugar
•1/4 cup.ish of 1/2 & 1/2 (or some alternative milk)
•1/2 tsp vanilla extract

Preheat oven to 350º.
If you are making the flax eggs..do that first..and put them in the fridge. (you can find a recipe for this online)
Get your bigger bowl and mix applesauce & honey. Add the eggs (or flax eggs), oil and vanilla. Mix. Add nuts. Mix again. Now mix all the dry ingredients together in A SEPARATE BOWL and then slowly add a little bit at a time to the wet ingredients.
Pre oil your pan. Bundt? Glass square? Fancy gingerbread house cake form? What ever you have. Just oil it up and pour in your batter. Bake for 45-1 hour or until a tester (I use a clean knife) comes out clean when you insert into the depth of the cake.
Cool on a rack for 10 or 15 min then flip it over and pray it actually comes out of the pan in one piece. It should. Mine mostly did. I have faith. You can do this.
Beat the cream cheese, sugar, vanilla and cream until all lumps are out and its pourable. We want this to be thick like a milk shake, but not too thick. Pour that over the cake and then top it with some Campfire Apple Rum.
