This cocktail is warm and spicy for those cold winter nights when you need to warm your bones or your cold dead heart. (just kidding) I used Banhez which is a nice mellow mezcal, smooth and easy with a mix of Espadin & Barril agave. Another very viable option is a tequila añejo. Casamigos Añejo is particularly delicious and not just because George Clooney is behind it.
A Winter Sueño (Dream)
serves 2
Ingredients:
•2 oz Mezcal or Tequila Anejo
•about 2 -3 TB Fernet Leopold - Highland Amaro
•1/2-1 tsp Dram Pine Syrup
•3-5 shakes of Fee Brothers Old Fashioned Bitters
•4 tsp syrup from Colorado Bourbon Cocktail Cherries
•a squeeze of lime juice
•pinch of ground sage rub (available at spice shops)
•ice
Rim:
•course sugar
•more ground sage
•agave syrup
Garnish:
•2 sage leaf
•2-4 Colorado Bourbon Cocktail Cherries
Prepare the serving glass. Use a vintage cocktail glass for swank, or what ever glass you have, because it's what's inside that counts. Dip the edges of the glass in agave syrup, then dip into the mixture of sage and sugar.
In a cocktail shaker add the booze of choice, pine syrup, cherry syrup, bitters and pinch of sage, fill with ice and shake for about a minute. Pour into the waiting glass.
Garnish with a sage leaf and cocktail cherry.
